Dolan Hotels are looking for a Food and Beverage Manager that will be responsible for the smooth running of the bar and restaurant.

General Scope of Job:

To be the cheery face of the Bar and Restaurant, ensuring that all guests leave satisfied, already planning their next meal before their current one has even ended, that the team are happy, motivated and eager to please, and that sales, satisfaction and profits are driven and developed wherever possible.

Main duties

  • Generally ensuring the smooth running of the bar and restaurant, including training, development, adherence to SOP’s, and assisting in day to day service in both the bar and the restaurant.
  • Leading and managing a bar & restaurant team, fostering a culture of growth, development, performance and happiness within the team.
  • To assist in the development of bar, wine and restaurant menus, fostering collaboration between the overall F&B team to improve satisfaction of offering for guests, ease of operations for the team and overall sales and success of the business.
  • To facilitate regular departmental meetings and briefings and foster a friendly relationship between the kitchen and front of house teams, to ensure good communication and cooperation within the F&B department.
  • To devise and manage rotas including controlling wage costs and overtime in accordance with budgets.
  • Management and accountability of beverage stock including ordering, monitoring and security procedures.
  • Management and accountability of equipment stocks, including breakages, par stocks and re-orders.
  • To assist senior management in all HR aspects of the F&B department, including but not limited to recruitment, development & championing of team members, as well as proper management of grievance & disciplinary procedures if required.
  • Participate in Duty Management shifts when required and be a generally happy and helpful contributor to the overall hotel team.

Skills and Qualifications:

  • Management experience in a four or five star establishment in both food and beverage service
  • Strong leadership, problem solving and organisational skills
  • An understanding of food health & safety procedures
  • Great interpersonal and communication skills and a friendly outgoing personality
  • IT skills including Microsoft Word & Excel
  • Manages daily food and beverage operations
